does that come under speculative fiction? or fantasy writing? I often think if writers should always stick within the genre they are good at?

Why not apply it to the story you are writing? Say you are writing about a happy family. What unimaginable thing might happen to turn the world upside down. Does that make it a better story?
What would happen in a mystery story if the detective was getting close to solving the murder and was found dead in his bathtub? What happens now?

ok so I went the other way with the word “unimaginable” – like a fantasy story. your explanation makes it clearer now, but I suppose all stories have a twist, not sure if I have ever seen it as unimaginable though. good point to ponder upon for future writing.

That is the great thing about these quotes, you can take them and interpret or adapt them to your work and your circumstances. What I read into them can be different from what you read and we can both be correct. 😊
